Cranberry mulled wine sorbet topcook.tomathouse.com
Ingredients:
- 4 cups fresh cranberries
- 2.5 cups red wine
- 4 allspice peas
- 2 cinnamon sticks
- 2 whole cloves
- Juice and strips of zest from 1 orange
- 1 vanilla bean
Preparation:
- Combine the cranberries, red wine, 2.5 cups of water, allspice, cinnamon sticks, whole cloves, orange zest, orange juice, and vanilla bean in a saucepan. Simmer over medium heat for 20-30 minutes. The cranberries will become very soft, and the liquid will have reduced by about 20%.
- Strain the mixture through a fine-mesh sieve to catch the spices, pressing gently on the cranberries to extract some of the pulp. Refrigerate the mixture to chill, then make the sorbet in an ice cream maker.
