Cranberry granita with vodka topcook.tomathouse.com
Ingredients:
- 2 cups cranberry juice
- 1/3 cup sugar
- 1/4 cup freshly squeezed lime juice
- 1/4 cup vodka
- 6 fresh cranberries, for serving
Preparation:
- In a medium, heavy-bottomed saucepan, combine the cranberry juice and sugar and heat over medium heat until the sugar dissolves. Pour the cranberry mixture into a 9 x 13 x 2-inch glass baking dish. Cool completely. Stir in the lime juice and vodka. Freeze for about 2 hours, until the granita is slushy. Stir with a fork. Continue freezing the granita, stirring every hour to form crystals. Freeze for at least 5 hours, or overnight.
- Divide the granita among 6 bowls. Garnish with fresh cranberries, if desired, and serve.
