Strawberry shots with basil granita topcook.tomathouse.com
Ingredients:
- 16 large strawberries
- 1 cup of sugar
- 1/4 cup apple juice
- 1/4 cup sparkling white wine
- 1 cup basil leaves
Preparation:
- Prepare sugar syrup: Combine sugar and 1 cup water in a saucepan and heat over medium-low heat, stirring until sugar dissolves.
- In a saucepan, combine 1 cup of sugar syrup, juice, and wine and bring to a boil over high heat. Carefully pour into a blender, add the basil, and blend until smooth (leave the lid slightly ajar while blending to allow steam to escape).
- Strain the basil syrup through a fine-mesh sieve into a 20cm square metal container. Freeze for 3-4 hours, scraping the mixture with a fork every 20 minutes to create a fluffy consistency. Store in the freezer until ready to serve.
- Cut the tops off the strawberries and trim the tips so they stand upright. Using a small spoon, scoop out the flesh of each strawberry to create small bowls. Fill them with granita.
Serve immediately.
