Ingredients:
- 2 cups salted roasted nut mix
- 1 tsp vanilla extract
- 0.5 tsp ground cinnamon
- 1/8 tsp ground cloves
- 110g butter, cut into 4cm cubes + extra for greasing the pan
- 1.5 cups of sugar
- 0.5 cups light raisins
Preparation:
- Combine nuts, vanilla, cinnamon, and cloves in a bowl. Lightly butter a rimmed baking sheet.
- In a saucepan over medium heat, heat the sugar, stirring constantly, until it begins to melt. Cook, swirling the pan but not stirring with a spoon, until most of the sugar has melted, about 10 minutes. Add the butter and continue cooking, swirling the pan, until the mixture turns deep amber and a syrup thermometer registers 150°C (300°F), about 7 minutes more. Remove from heat, stir in the nut mixture, then the raisins. Transfer to the prepared baking sheet and smooth out the top with a rubber spatula. Let cool completely, then break the toffee into pieces.
