Ingredients:
- 8-10 fresh figs, halved
- 2 teaspoons olive oil
- 1 cup roasted salted nut mix + chopped nuts for topping
- 1 tbsp. l. peanut butter
- 3/4 cup ricotta
- 2 tbsp honey + extra for drizzling
- 0.5 tsp ground cinnamon
- Toasted multigrain bread for serving
Preparation:
- Preheat the oven to 200°C. Place the figs in a baking dish and toss with olive oil and a pinch of salt. Bake until soft, about 10 minutes.
- Meanwhile, in a food processor, pulse the nuts and peanut butter until smooth and creamy, about 2 minutes. Scrape down the sides of the processor. Add the ricotta, honey, and cinnamon and pulse again for about 1 minute.
- Spread the ricotta mixture on the bread and top with baked figs. Drizzle with honey and sprinkle with chopped nuts.
