Salad with pasta, ham and sweet peppers

Ingredients:

  • 220 g of pasta
  • 1/3 cup mayonnaise
  • 1/4 cup chopped fresh parsley
  • 3 tbsp sour cream
  • 2 tbsp finely chopped chives
  • 1.5 tbsp freshly squeezed lemon juice
  • 1 cup diced ham
  • 1/4 cup chopped red onion
  • 2 bell peppers, preferably 1 red and 1 yellow, chopped

Preparation:

  1. In a large saucepan, bring salted water to a boil.
  2. In a large bowl, combine mayonnaise, parsley, sour cream, chives, lemon juice, 1/2 teaspoon salt and a little black pepper.
  3. Place the pasta in boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool; transfer to a bowl with the dressing.
  4. Add the ham, onion, and bell pepper to the pasta and toss. Season with salt and pepper to taste. This pasta salad is best served immediately.
