Ingredients:
- 1 package (450-550 g) frozen sweet potatoes for deep frying
- 3 strips bacon, chopped
- 2 tablespoons dark brown sugar
- 1 tbsp fish sauce
- 2 teaspoons Asian hot sauce (such as Sriracha)
- 1.5 tbsp. l. lime pickle
- 0.5 tsp grated lime zest
- 2 tbsp chopped fresh cilantro
- Fried onions or shallots, for serving
Preparation:
- Bake sweet potatoes according to package directions.
- Meanwhile, fry the bacon in a skillet over medium heat until crisp, about 8 minutes, then transfer it with a slotted spoon to paper towels to drain. Remove the skillet from the heat and stir in the brown sugar, fish sauce, chili sauce, and lime juice and zest. Stir until the sugar is completely dissolved.
- Transfer the sweet potatoes to a serving platter. Drizzle with the chili sauce and sprinkle with bacon, cilantro, and fried onions.
