Garnet-lavender snow (granita) topcook.tomathouse.com
Ingredients:
- 3 cups of pomegranate juice
- 1 teaspoon chopped fresh lavender flowers + flowers for garnish
- 2 tablespoons freshly squeezed lime juice
- 0.5 cup spiced rum (optional)
Preparation:
- Combine the pomegranate juice and lavender in a chilled stainless steel bowl. Add lime juice and rum, if using. Freeze until the mixture is set around the edges, 20-25 minutes.
- Fluff the granita and continue freezing, scraping it with a fork every 20-25 minutes until it becomes fluffy and slushy, about 2.5 hours; then cover and freeze overnight. Scrape the granita with a fork and spoon it into martini glasses. Garnish with lavender flowers.
