Grilled Buffalo Skirt Steak with Roasted Corn and Butter topcook.tomathouse.com
Ingredients:
- 0.7 kg skirt steak, cut into 4 pieces
- 60 g unsalted butter, room temperature
- 1 tbsp. Buffalo hot sauce
- 4 ears of corn, shelled and broken in half
- 1 tbsp extra-virgin olive oil
- 1/4 cup crumbled blue cheese (about 60 g)
Preparation:
- Preheat the grill to medium-high heat. In a small bowl, combine the butter, hot sauce, and 1/2 teaspoon of salt.
- Grill the corn, turning frequently, until lightly charred, about 10 minutes. Transfer to a plate.
- Meanwhile, rub the steak with olive oil and season with salt and black pepper. Cook for 3-4 minutes on each side for medium-rare. Transfer to a cutting board and let rest for 5 minutes; then slice.
- Brush the corn and steak with Buffalo butter. Sprinkle the steak with blue cheese.
