Pumpkin Seed Snack Mix

Ingredients:

  • Protein of 1 large egg
  • 2 teaspoons of sugar
  • 2 tsp dried thyme
  • 2 tsp chili powder
  • 1.5 cups roasted pumpkin seeds (shelled, unsalted)
  • 1 cup roasted pistachios (shelled, unsalted)
  • 3 tablespoons sesame seeds
  • 3/4 cup wasabi peas

Preparation:

  1. Preheat the oven to 325°F (160°C) and line a rimmed baking sheet with parchment paper. In a large bowl, beat the egg whites until foamy, then whisk in the sugar, thyme, chili powder, 1 1/4 teaspoons of salt, and a pinch of freshly ground black pepper. Add the pumpkin seeds, pistachios, and sesame seeds; stir to coat.
  2. Spread the mixture in an even layer on the prepared baking sheet and bake, stirring halfway through, until the snacks are crispy, about 20 minutes. Remove from the oven, add the wasabi peas, and toss to combine. Let cool.
