Edamame Bean Snack Mix

topcook.tomathouse.com

Ingredients:

  • 8 cups crispy rice squares (e.g., breakfast cereal, Chex)
  • 1 package (100g) rice crackers, broken into bite-size pieces (about 3 cups)
  • 2 cups crispy chow mein noodles
  • 2 cups fried edamame beans
  • 1 cup unsalted roasted peanuts
  • 4 tablespoons unsalted butter
  • 1/4 cup lightly salted soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp dark sesame oil
  • 1/8 tsp chili oil
  • 1.5 tsp Chinese 5-spice seasoning
  • 1.5 tsp garlic powder
  • 2 cups sesame sticks (or broken sesame breadsticks)

Preparation:

  1. Preheat oven to 120°C. Combine rice squares, crackers, noodles, edamame, and peanuts in a large bowl. If using breadsticks instead of sesame seeds, add them now.
  2. Melt the butter in the microwave until completely melted. Add the soy sauce, Worcestershire sauce, sesame oil, chili oil, five-spice powder, and garlic powder.
  3. Spread the mixture on 2 baking sheets and spread it out. Drizzle with butter and mix well with your hands.
  4. Bake for 1 hour, stirring every 15 minutes and rotating the baking sheets halfway through; stir in the sesame seeds 15 minutes before the end of the baking time. The mixture is ready when the oil is absorbed and the mixture becomes crispy.
