Guacamole

Ingredients:

  • 6 ripe avocados
  • Juice of 3 limes
  • 1 medium onion, chopped
  • 1 clove garlic, crushed and minced
  • 2 serrano peppers, sliced ​​into rings
  • 1 large handful fresh cilantro with stems, about 1/2 cup, finely chopped
  • Extra-virgin olive oil
  • Coarse salt
  • Freshly ground black pepper

Preparation:

  1. Halve the avocado and remove the pits. Using a tablespoon, scoop out the flesh into a bowl. Mash the avocado with a fork or potato masher to create a chunky paste. Add the remaining ingredients and toss. Drizzle with olive oil, season with salt and pepper to taste, and toss again.
  2. Place a piece of plastic wrap on the surface of the guacamole to prevent it from browning and refrigerate for at least 1 hour before serving.
