Coffee brownie with peanut butter chunks

Ingredients:

  • 1/3 cup vegetable oil
  • 1 large egg
  • 2 tablespoons espresso powder
  • 1 package of dry brownie mix (500 g)
  • 3/4 tbsp. peanut butter granules
  • 1/4 teaspoon coarse salt flakes

Preparation:

  1. Preheat oven to 350°F (175°C). Spray a 20 x 20 cm (8 x 8 in) baking dish with cooking spray.
  2. In a large bowl, combine 1/3 cup water, vegetable oil, egg, and espresso powder. Add the brownie mix and mix until smooth. Fold in the peanut butter chunks. Transfer the batter to the prepared pan. Sprinkle evenly with coarse salt. Bake until a toothpick inserted into the center of the brownie comes out with a few moist crumbs, 35-40 minutes.
  3. Cool completely, then cut into squares. Place the cakes on a platter and serve.
