Ingredients:

  • 110 g unsalted butter
  • 3/4 cup dark brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 340 g semi-sweet chocolate in granules or pieces
  • 2 and 1/4 cups premium flour
  • 3/4 tsp baking soda
  • 1 teaspoon fine salt

Preparation:

  1. Position two oven racks on the middle shelf and preheat to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats. If you only have one baking sheet, let it cool completely before baking the second batch of cookies.
  2. Place the butter in a microwave-safe bowl, cover, and microwave on medium power until melted. Alternatively, melt the butter in a small saucepan on the stovetop. Cool slightly. In a large bowl, whisk together the sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, and salt. Using a wooden spoon, fold the dry ingredients into the wet ingredients, being careful not to overmix. Add the chocolate chips.
  4. Drop 1 heaping tablespoon of dough onto the prepared baking sheets. Lightly wet your hands and roll the dough into balls. Space the cookies about 2 inches apart. Bake until golden brown but still soft in the center, 12-16 minutes, depending on how soft or crisp you like your cookies. Use a spatula to transfer the hot cookies to a wire rack, cool, and serve.     Lightly grease a 9 x 13-inch (22 x 32 cm) baking pan. Mix the dough according to the recipe and fold in 1 cup chopped walnuts along with the chocolate chips. Pour the dough into the prepared pan. Bake until the edges are golden brown and the dough is set, about 45 minutes. Cool slightly and top the crust with 4 cups marshmallows and 1 cup chocolate chips. Toast in the oven on the broiler, at least 8 inches (20 cm) from the grill, until the marshmallows are golden brown, about 2 minutes. Keep an eye on the marshmallows and rotate the pan frequently to prevent the topping from burning. Cool, cut into bars, and serve.
