Ingredients:
- 1 bunch thin asparagus, trimmed and cut into 2cm pieces (about 2 cups)
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 4 large eggs
- 0.5 cups heavy cream
- 1 cup crumbled feta
Preparation:
- Preheat the oven to broil. Melt the butter in a 9-inch cast iron skillet. Add the onion and cook until softened, about 5 minutes. Add the asparagus and cook until tender, 2 minutes.
- In a medium bowl, whisk together the eggs, cream, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth. Stir in the feta. Pour the egg mixture over the asparagus and cook until almost set, 2-4 minutes.
- Transfer the pan to the broiler and broil until golden brown, 8-10 minutes. Serve the frittata warm or at room temperature.
