Fruit salad with strawberries and rhubarb

Ingredients:

    Fruit salad with strawberries

  • 2 cups strawberries, quartered
  • 1 cup blackberries or raspberries, halved
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh mint

    Rhubarb Simple Syrup

  • 1 cup granulated sugar
  • 2 cups chopped rhubarb
  • 1/4 teaspoon salt

Preparation:

  1. Rhubarb Simple Syrup:

    In a small saucepan, combine the sugar with 1 cup of water. Cook over medium heat, stirring occasionally, until the sugar begins to dissolve, about 5 minutes. Once the liquid begins to boil, add the rhubarb and reduce the heat to medium-low. Cook, stirring occasionally, until the rhubarb softens and the syrup turns light pink, about 25 minutes. Set the rhubarb syrup aside to cool slightly and thicken, about 30 minutes.
  2. Berry salad with strawberries:

    Place the strawberries and blackberries in a serving bowl and drizzle generously with rhubarb syrup. Top with the poached rhubarb. Sprinkle with basil and mint.
