Ingredients:
- 2 medium yellow zucchini, thinly sliced
- Half a red bell pepper, chopped
- 1 tbsp extra-virgin olive oil
- 2 tablespoons butter
- 2 tbsp chopped parsley leaves
- 2 tbsp chopped chives or 2 green onions, optional
Preparation:
- Heat a frying pan over medium heat. Add olive oil, then butter. Once the butter has melted, add the bell pepper and zucchini. Sauté for 12-14 minutes, until the zucchini is tender. Season with salt, black pepper, and parsley. Add green onions if you prefer more flavor.
