Ingredients:
- Honey to drizzle, optional
- 3/4 cup skim milk
- 0.5 cups oatmeal
- 1 teaspoon dark brown sugar
- 1/8 tsp vanilla extract
- 1 small carrot, finely grated
- 1 tbsp toasted sweet coconut flakes
- 1 tbsp. raisins
- 1 tbsp. toasted chopped walnuts
- A pinch of ground cinnamon
- Special equipment: a half-liter jar or container with a lid
Preparation:
- In the evening, combine milk, oats, brown sugar, vanilla extract, carrots, and a pinch of salt in a jar (or container). Close the lid and shake. Refrigerate for at least 6 hours or overnight.
- In the morning, sprinkle your oatmeal with coconut flakes, raisins, walnuts, and cinnamon. Drizzle with honey, if desired.
