Carrot cake in a jar

Ingredients:

  • Honey to drizzle, optional
  • 3/4 cup skim milk
  • 0.5 cups oatmeal
  • 1 teaspoon dark brown sugar
  • 1/8 tsp vanilla extract
  • 1 small carrot, finely grated
  • 1 tbsp toasted sweet coconut flakes
  • 1 tbsp. raisins
  • 1 tbsp. toasted chopped walnuts
  • A pinch of ground cinnamon
  • Special equipment: a half-liter jar or container with a lid

Preparation:

  1. In the evening, combine milk, oats, brown sugar, vanilla extract, carrots, and a pinch of salt in a jar (or container). Close the lid and shake. Refrigerate for at least 6 hours or overnight.
  2. In the morning, sprinkle your oatmeal with coconut flakes, raisins, walnuts, and cinnamon. Drizzle with honey, if desired.
