Summer Vegetable Sauté

Ingredients:

  • 1 tbsp. l. olive oil
  • 1 teaspoon crushed garlic
  • Half a red bell pepper, chopped
  • Half a yellow bell pepper, chopped
  • 6 champignons, chopped
  • 4 cauliflower florets, chopped
  • Half a zucchini, chopped
  • Half a yellow squash, chopped
  • 0.5 tsp dried oregano
  • 2 tablespoons soy sauce
  • 2 tablespoons chicken broth

Preparation:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook, stirring, for 1 minute. Add all the vegetables and cook until wilted, about 2 minutes.
  2. Add oregano, soy sauce, and chicken broth, stir well, and cook just until the vegetables are wilted, about 3 minutes. Remove from heat and serve.
