Fried potatoes with vegetables and scrambled eggs topcook.tomathouse.com
Ingredients:
- 1 potato tuber, mash, wash with a brush
- 1 sweet potato, washed with a brush
- 3 tablespoons salted butter
- 1 cup chopped red bell pepper
- 1 tbsp. chopped yellow zucchini
- 1 cup chopped zucchini
- Half a red onion, chopped
- 4 large eggs
Preparation:
- Prick the potatoes several times with a fork, microwave them on high power, and cook until tender, 5-10 minutes. Carefully peel the skins off the sweet potatoes. Dice both potatoes and set aside.
- In a medium skillet over medium heat, melt 2 tablespoons of butter. Add the bell pepper, zucchini, squash, and onion and sauté for a few minutes. Add the diced potatoes and sweet potatoes to the vegetables and sauté until golden brown. Season with salt and pepper to taste.
- In a separate skillet over medium heat, melt the remaining 1 tablespoon of butter and crack in the eggs. Cook until the whites are set, 3-4 minutes.
- Serve vegetables with scrambled eggs on top of each serving.
