Ingredients:
- 2 x 425g cans white beans, rinsed
- 1 can (425 g) of canned crushed tomatoes
- 340 g smoked ham, cut into 0.5 cm cubes.
- 2 tsp rapeseed oil (canola)
- 1 medium onion, diced
- 2 cloves garlic, crushed
- 0.5 cups of water
- 1/4 cup unsulfured molasses
- 1 tbsp Dijon mustard
- 1 tablespoon apple cider vinegar
- 0.5 tsp ground black pepper
Preparation:
- Heat oil in a large skillet over medium-high heat. Add the onion and cook until soft and translucent, about 5 minutes. Add the ham and garlic and cook for another 3 minutes.
- Add white beans, pureed tomatoes, water, molasses, mustard, vinegar, and black pepper. Bring to a boil, then reduce heat. Cover and simmer until about half the liquid is absorbed, 15 minutes.
