Tropical fruit salad in ginger syrup topcook.tomathouse.com
Ingredients:
- 1/4 cup sugar
- 7.5 cm ginger root, peeled and chopped
- Zest of 1 lime
- 2 cups strawberries, hulled and halved or quartered
- 2 kiwis, peeled, sliced into rounds and then quartered
- 1 mango, cut into pieces
- 1 orange, divided into segments
- 1 small pineapple, cut into pieces
- 1 papaya, cut into pieces
- A handful of fresh mint, chopped
Preparation:
- Combine sugar, 1/4 cup water, ginger, and lime zest in a small saucepan. Bring to a boil and simmer until the sugar dissolves. Remove from heat and refrigerate until completely cool.
- Strain the syrup into a large bowl and toss in the strawberries, kiwi, mango, oranges, pineapple, and papaya. Stir to coat. Cover and refrigerate until completely chilled, at least 1 hour.
Serve in small bowls, garnished with chopped mint.
