Ingredients:
- 1 cup shredded cooked chicken*
- 1/3 cup of something crunchy that you like (celery, apple, radish, pickles, or a combination)
- Something onion-based, such as 1 green onion or 1/4 of a small red onion, chopped
- 1/4 cup mayonnaise or plain yogurt
- 2 whole grain hot dog buns
- Seasoning to taste **
Preparation:
- Combine the chicken with something crispy and something oniony. Add mayonnaise or yogurt and toss to coat the salad evenly. Season with salt and pepper to taste. You can prepare the salad the night before and refrigerate it.
Variation: Roasted turkey also makes a great sandwich.*
Gourmet option: You can stir in 2 teaspoons curry powder, 1/3 cup chopped fresh cilantro and 1/4 cup golden raisins.**
- Fill hot dog buns evenly with lettuce. Wrap in parchment or paper. Pack in a lunchbox with an ice pack next to it, and send your child to school.
