Ingredients:
- 1 cup whole milk
- 3/4 cup premium flour
- 3 large eggs, lightly beaten
- 1 tsp vanilla extract
- 3 tablespoons unsalted butter, melted
- 1/4 tsp baking powder
- 1 cup frozen berry mix of blueberries, lingonberries, and strawberries
- 2 tbsp. granulated sugar
- 1 tbsp powdered sugar, for sprinkling if desired
Preparation:
- Preheat oven to 200°C. Generously spray a metal muffin tin with cooking spray and set aside.
- In a medium bowl, combine the milk, flour, eggs, vanilla extract, and 0.5 teaspoon salt. Drizzle with melted butter and knead until smooth, then let the dough rest for 5 minutes.
- Stir in the baking powder and spread the batter evenly among the muffin tin wells (just under 1/4 cup per serving). Bake until the popovers are puffed and golden brown around the edges, 20-25 minutes, rotating the pan halfway through baking.
- While the popovers are baking, combine the berries, 1/2 cup water, and granulated sugar in a small saucepan and bring to a boil over medium heat. Cook until the berries release their juices and become soft, and the liquid has evaporated and thickened, about 10 minutes. Taste; as with all sweets, moderation is key. Remove from heat and cover to keep warm.
- When the popovers are done, remove them from the pan, using a spatula if necessary. Place 2 popovers on each of six serving plates, garnish with a dollop of berry sauce, and dust with powdered sugar, if using.
