Ingredients:
- 2 cups premium flour
- 1 and 1/4 teaspoons baking powder
- 3/4 tsp baking soda
- 2 and 1/4 teaspoons dry mustard
- 0.5 tsp coarse salt
- A pinch of cayenne pepper
- 3/4 tbsp. + 1 tbsp. l. milk
- 1/3 cup vegetable oil
- 2 tablespoons of honey
- 3 eggs
- 1 piece (170 g) ham, finely chopped (about 1 and 1/4 cups)
- 1 cup grated Gruyere (about 110 g)
- 1/2 cup Havarti or Gruyere cheese, cut into 1/2-inch cubes (about 60 g)
- 2 green onions, chopped
Preparation:
- Preheat oven to 350°F (175°C). Lightly spray a 9 x 5 x 3-inch (22 x 12.5 x 7.5 cm) metal baking dish with cooking spray and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, 3/4 teaspoon dry mustard, coarse salt, and cayenne pepper. In a large bowl, whisk together 3/4 cup milk, vegetable oil, 1 tablespoon honey, and eggs until smooth. Stir in the flour mixture and knead into a dough. Then fold in the ham, 3/4 cup grated cheese, diced cheese, and green onions.
- Pour the dough into the prepared loaf pan and sprinkle the top with the remaining 1/4 cup grated cheese. Bake until the bread is puffed and golden brown and a wooden skewer or cake tester inserted into the center comes out clean, 40-45 minutes.
- Cool the bread in the pan for 10 minutes. Meanwhile, in a small bowl, whisk together 1 tablespoon each of honey and milk and the remaining 1.5 teaspoons of dry mustard until smooth. Microwave until just simmering, about 20-30 seconds. Turn the loaf out onto a wire rack and generously brush with warm glaze. Cool completely.
