Portioned casseroles with ham topcook.tomathouse.com
Ingredients:
- 20 large eggs
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp chili powder
- 220 g thin slices of ham, cut into cubes
- 1.5 tbsp. freshly grated cheddar
- 1 large green bell pepper, finely diced
- 1 large onion, finely diced
Preparation:
- Preheat oven to 350°F (175°C). Generously spray 24-cup muffin tins (2 standard muffin tins) with cooking spray.
- Crack the eggs into a bowl, add salt, black pepper, and chili powder. Beat until smooth. Add the ham, grated cheddar, bell pepper, and onion and mix.
- Using a measuring spoon, ladle the egg mixture into the casseroles. Bake for 20-22 minutes, until puffed and just set.
- After a minute or two, the casseroles will begin to shrink a little; this is normal! Run a knife around the edges of each mold and remove the casseroles from the molds. Serve warm or at room temperature.
Note
These casseroles are freeze-safe! Freeze them directly in the pan, then transfer them to zip-lock bags. Defrost and microwave before serving.
