Spaghetti in fresh tomato sauce in one pot topcook.tomathouse.com
Ingredients:
- 340 g spaghetti, broken in half
- 3 tbsp. l. olive oil
- 1 tbsp tomato paste
- 4 cloves garlic, thinly sliced
- 2 medium tomatoes, coarsely chopped
- A handful of fresh basil leaves, plus extra for serving
- A large pinch of red pepper flakes
- 0.5 cup grated Parmesan + extra for serving
Preparation:
- Combine the spaghetti, olive oil, tomato paste, garlic, tomatoes, basil, red pepper flakes, and 1 teaspoon salt in a medium skillet with high sides. Add 5 cups of water and bring to a boil over medium-high heat. Continue cooking, stirring frequently to prevent the spaghetti from sticking, until al dente and the sauce has thickened, 6-8 minutes.
- Add the Parmesan (the sauce will thicken even more) and season with salt to taste, if needed. Divide the spaghetti among four plates and sprinkle with additional Parmesan and basil.
