Asian-style fried rice with vegetables topcook.tomathouse.com
Ingredients:
- 3 cups of leftover cooked rice
- 2 tbsp. l. olive oil
- 1 package (150 g) mini pepperoni
- 1 medium onion, thinly sliced
- 1 green bell pepper, diced
- 2 cloves garlic, crushed
- 2 tbsp store-bought pizza sauce
- 1 teaspoon red pepper flakes
- 1 can (220g) canned pineapple chunks, drained
- 1 cup mozzarella pearls or diced mozzarella
- 1/4 cup fresh basil leaves
Preparation:
- Heat olive oil in a cast-iron skillet over medium-high heat, then add pepperoni, onion, bell pepper, and garlic. Cook until the onion is soft and the pepperoni is slightly crisp, about 3 minutes. Add pizza sauce and red pepper, then toss to combine.
- Add the rice and cook, stirring, until crisp and browned in spots, 2-3 minutes. Stir in the pineapple to heat through and coat. Cook for about another minute. Turn off the heat, then add the mozzarella, stirring constantly. Tear half the basil and add it to the pan. Taste and season with salt and pepper if needed.
- Serve fried rice immediately, sprinkled with the remaining basil.
