Pico de gallo with black beans

Ingredients:

  • 1 can of canned black beans
  • 2 diced plum tomatoes
  • Half a head of red onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon chopped chipotle pepper in adobo sauce

Preparation:

  1. In a bowl, combine 1 can of rinsed black beans, 2 diced plum tomatoes, 1/2 of a finely chopped red onion, and 1/4 cup chopped cilantro. Add the juice of 1 lime, 2 tablespoons olive oil, 1 tablespoon chopped chipotle pepper in adobo sauce, and 1 teaspoon honey and toss to combine; season with salt to taste.
