Ham and cheese sandwiches without bread

Ingredients:

  • 1 tbsp sour cream
  • 1 tbsp. thinly sliced ​​chives
  • 1 teaspoon Dijon mustard
  • 1 teaspoon horseradish
  • 1 medium jicama, about 10 cm wide, peeled and cut into 8 1 cm thick rounds.
  • 170 g thin slices of lightly salted ham
  • 4 slices Havarti cheese (about 90g)
  • 2 cups fine arugula
  • Pickle sticks for serving (optional)

Preparation:

  1. In a small bowl, combine sour cream, green onions, mustard, horseradish and a little freshly ground black pepper.
  2. Place four jicama slices on a work surface. Brush each with mustard sauce, top with a quarter of the ham, a slice of cheese, and about 1/2 cup of arugula.
  3. Top with the remaining jicama slices, cut the sandwiches in half and serve with pickles.
