Warm Lentil Salad with Bacon topcook.tomathouse.com
Ingredients:
- 1 cup green lentils
- 3 tbsp. l. olive oil
- 2 tbsp sherry vinegar
- 2 slices of bacon
- 2 stalks of celery
Preparation:
- In a saucepan, fry 2 slices of bacon; remove with a slotted spoon. Add 2 chopped celery stalks, 2 minced garlic cloves, and 1 sliced red onion; fry for 4 minutes.
- Add 4 cups water and 1 cup dried green lentils (rinsed); simmer until tender, 30 minutes.
- Add 3 tablespoons olive oil, 2 tablespoons sherry vinegar, and 1 tablespoon grainy mustard; season with salt and pepper to taste. Sprinkle with fried bacon, chopped parsley, and sliced roasted red pepper.
