Ingredients:
- 4 stalks of celery
- 0.5 cup dill
- 0.5 cup tarragon
- 1/4 cup chives
Preparation:
- In a large bowl, combine 1.5 cups each fresh parsley and mint, add 0.5 cups each finely chopped dill and tarragon, and 1/4 cup finely chopped chives.
- In another bowl, use a vegetable peeler to shred 4 celery stalks. Mix together 4 teaspoons champagne vinegar, 1 teaspoon honey, 2 tablespoons olive oil, and a pinch each of salt and black pepper. Add the dressing to the bowl with the celery and herbs and toss to combine.
- Sprinkle with toasted, shelled pumpkin seeds.
