Spicy cumin fries

Ingredients:

  • 900 g frozen crinkle-cut French fries
  • 0.5 cup chopped dried chili peppers (cayenne or arbol)
  • 1/4 cup vegetable oil
  • 2 tablespoons cumin seeds
  • 1 tbsp Sichuan chili pepper
  • 4 green onions, chopped
  • Black peppercorns

Preparation:

  1. Position oven racks in the upper and lower thirds of the oven and preheat to 230°C (430°F). Line 2 rimmed baking sheets with foil, then arrange the fries on them.
  2. Bake, stirring once or twice, until golden and crisp, 30 to 45 minutes. Transfer to a large bowl.
  3. Place the chili peppers in a bowl, cover with a plate, and shake to release the seeds. Collect the chili peppers, leaving the seeds in the bowl.
  4. Heat vegetable oil in a large skillet over medium heat. Add cumin seeds, peppercorns, chopped chili, and 1 teaspoon salt and cook, stirring, for 2-3 minutes. Add green onions and remove from heat.
  5. Toss the fries with the herb oil and season with salt. Remove and discard any large pieces of chili.
