Ingredients:
- 1 tbsp. lemon sorbet
- 3/4 cup sweetened condensed milk
- 2/3 cup heavy cream
- 1 prepared graham cracker pie crust, 9" in diameter
Preparation:
- Place the sorbet in a medium microwave-safe bowl and heat until melted. Add the condensed milk and let cool.
- Place the cream in another medium bowl and beat with an electric mixer until thick and falling in ribbons from the beaters (do not beat to soft peaks), 2 to 3 minutes.
- Gently fold the thickened cream into the lemon sorbet mixture and spoon it onto the pie crust. Spread it into an even layer.
- Cover tightly with plastic wrap and freeze until the filling is set, about 2 hours or overnight.
