Ingredients:
Dough
- 2 cups premium flour + more as needed
- 1 tbsp baking powder
- 1 teaspoon of sugar
- 1 teaspoon fine salt
- 100 g chilled unsalted butter, thinly sliced
- 3/4 cup milk
Glaze
- 1 tbsp. heavy cream
- 1 tbsp melted unsalted butter
Preparation:
- Position a rack in the middle of the oven and preheat the oven to 230°C (430°F). Line a baking sheet with two layers of parchment paper. Set aside.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined. Using your fingertips, rub 2 tablespoons of butter into the flour until completely incorporated.
- Add the remaining butter to the flour and rub it in with your hands until it forms pea-sized pieces. Gently fold the milk into the flour mixture with a fork to form a rough dough.
- Turn the dough out onto a well-floured work surface. Using your hands, form the dough into a 1 cm thick rectangle. Fold the dough into thirds, like a business letter. For a more layered texture, repeat the folding process.
- Form the dough into a 2.5 x 20 cm rectangle, 2 cm thick. Using a 5-7 cm round cookie cutter, cut out 6 circles from the dough and place them on the prepared baking sheet. Gather the dough scraps, form the rectangle, and cut out 2 more circles and place them on the baking sheet.
- Make the glaze by mixing the cream and melted butter in a small bowl. Lightly brush the top of the dough with the glaze. Bake until golden brown, about 15 minutes. Let the buns cool on a wire rack for 5 minutes and serve.
