Gin and tonic with hibiscus

Ingredients:

  • 0.5 cups dried hibiscus flowers
  • 0.5 cups of sugar
  • 3/4 cup gin
  • 1/4 cup freshly squeezed lemon juice (1-2 lemons)
  • 1.5 cups tonic

Preparation:

  1. Combine the hibiscus flowers, sugar, and 1/2 cup water in a small saucepan and bring to a boil. Reduce heat to medium and simmer, stirring, until the sugar dissolves, about 2 minutes. Pour the syrup into a small bowl and refrigerate for at least 1 hour or overnight.
  2. Strain the syrup into a measuring cup, reserving some of the flowers for garnishing cocktails. Combine gin, lemon juice, and 1/4 cup hibiscus syrup in a small pitcher. Add tonic water. Add more syrup to taste.
  3. Fill 4 glasses with ice. Pour the cocktail and garnish with hibiscus flowers.
