Kid-Friendly: Chocolate Oatmeal Muffins

Ingredients:

  • 1 cup whole wheat flour
  • 3/4 cup rolled oats
  • 0.5 tsp of soda
  • 1/4 teaspoon coarse salt
  • 6 tablespoons unsalted butter, melted and cooled slightly
  • 1 large egg
  • 3/4 cup light brown sugar* (see Note)
  • 0.5 cups sugar-free applesauce
  • 3/4 tbsp. semi-sweet chocolate mini granules

Preparation:

  1. Preheat oven to 350°F (175°C). Line a 9-inch square baking pan with foil, allowing it to overhang by 2 inches on both sides. Lightly spray the foil with cooking spray; set aside.
  2. In a medium bowl, combine the flour, oats, baking soda, and salt; set aside. In a large bowl, combine the butter, egg, brown sugar, and applesauce. Add the flour mixture to the wet mixture and knead into a dough. Stir in the chocolate chips.
  3. Pour the batter into the prepared baking pan. Bake until lightly browned around the edges and a toothpick inserted into the center comes out clean, 25-30 minutes. Remove from the oven and let cool on a wire rack for 15 minutes.
  4. Pull the foil overhangs to lift the cake out of the pan and let it cool completely on a wire rack. Invert the cake onto a plate and remove the foil. Invert the cake onto a cutting board, cut into 12 pieces, and serve.

    Note
