French toast with lemon and berries

Ingredients:

  • 4 slices brioche
  • 1/3 cup lemon curd
  • 4 eggs
  • 1/2 tbsp butter, plus more if needed

Preparation:

  1. Spread lemon curd on 4 thick slices of brioche bread, top with berries, such as blueberries, and then another slice of bread. Press down, dip in the Perfect French Toast egg mixture, and fry, then bake as directed. Dust with powdered sugar.

    In a shallow bowl, whisk together 4 eggs, 1 1/2 cups milk or light cream, 1/2 teaspoon ground ginger, 1 teaspoon vanilla extract, 1 teaspoon sugar and a pinch of salt.

  3. Preheat oven to 175°C.
  4. Heat 1/2 tablespoon butter in a nonstick skillet over medium heat. Working in batches, fry the French toast until golden brown, 2-3 minutes per side, adding more butter as needed.
  5. Transfer the French toast to a baking sheet and bake until puffed, 8 to 10 minutes.
