Ingredients:
- 220g butter, chopped and softened, plus extra for greasing the pan
- 4 peaches, peeled and sliced
- 1/4 cup water
- 1/4 tbsp. golden syrup (such as Lyle's)
- 2 cups premium flour
- 1 cup finely ground pecans
- 1 cup powdered sugar
- 1 teaspoon baking powder
- 0.5 tsp salt
Preparation:
- Preheat oven to 175°C. Line a 22x32 cm baking sheet with foil and grease the foil with oil.
- Simmer the peaches with the water and golden syrup in a saucepan until the mixture thickens like jam, mashing the peaches as needed, about 12 minutes.
- Combine flour, pecans, powdered sugar, baking powder, and salt in a bowl. Stir in the butter pieces until moist lumps form.
- Spread two-thirds of the dough into the baking pan and press into an even layer. Top with the peach filling and sprinkle with the remaining dough. Bake at 350°F (175°C) until golden brown, 40-45 minutes. Cool completely in the pan, then remove by pulling the foil tabs. Cut the cookies into bars.
