Olives in a citrus-spicy dressing topcook.tomathouse.com
Ingredients:
- 3 tbsp. l. olive oil
- 2 cloves garlic, crushed
- 1.5 tsp crushed red pepper flakes
- 1 large sprig of fresh rosemary, 2 bay leaves, or both
- Zest of 1 orange, peeled into long strips with a vegetable peeler
- Zest of 1 lemon, peeled into long strips with a vegetable peeler
- 350 gr. mixtures of olives, such as kalamata, nicoise and/or cerignola
- 0.5 tsp coarse salt
Preparation:
- In a medium skillet, combine olive oil, garlic, red pepper flakes, herbs, and citrus zest. Heat over medium heat, swirling the pan, until fragrant, 3-4 minutes.
- Add the olives, season with salt and pepper, and cook, stirring occasionally, until the garlic is golden and the zest begins to curl, about 5 more minutes. If you used a bay leaf, remove it from the mixture. Serve the olives warm or at room temperature.
