Ingredients:
- 1/4 cup mayonnaise
- 1/4 cup tightly packed fresh tarragon leaves
- 2 small tomatoes, coarsely chopped, removing the cores
- 1 small sweet red pepper, seeded and coarsely chopped
- 1 clove of garlic
- Sliced vegetables for serving
Preparation:
- Place the mayonnaise, tarragon, tomatoes, bell pepper, garlic, and 0.5 teaspoon salt in a blender or food processor and blend until smooth. Serve with a vegetable platter for dipping. The sauce can be refrigerated in a tightly sealed container for up to three days.
