Baked Peaches with Streusel and Sorghum Glaze topcook.tomathouse.com
Ingredients:
- 1 cup premium flour
- 1/4 cup light brown muscovado sugar
- 0.5 tsp ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 11 tablespoons unsalted butter, melted
- 4 peaches, halved and pitted
- 0.5 cup sorghum syrup
- Whipped cream or vanilla ice cream, optional
Preparation:
- Preheat oven to 175°C.
- In a small bowl, combine flour, sugar, cinnamon, and nutmeg. Add 8 tablespoons of melted butter and stir until the flour resembles wet sand. Refrigerate for 15 minutes.
- Cut a very thin slice off the bottom of each peach half so they stand up straight. Grease the bottom and sides of a 9x13-inch baking dish with 3 tablespoons melted butter, then brush the remaining butter over the peaches. Place the peaches cut-side up in the dish, about 1/2 inch apart. Season lightly with salt. Sprinkle each peach with streusel. Bake in the oven until the peaches are soft and the streusel is golden brown, 45 to 55 minutes, depending on how ripe the peaches are.
- When the peaches are almost done, pour the syrup into a small saucepan and bring to a simmer over low heat. Keep warm. Serve the peaches drizzled with sorghum syrup and garnished with whipped cream, if using.
