Ingredients:
- 14-16 lemons
- 1.5 cups of sugar
- Special equipment: 3 ice cube trays (12 cells each)
Preparation:
- Set aside 1 lemon for garnish. Using a vegetable peeler, peel the zest from 2 lemons in wide strips, being careful not to remove the white pith. Squeeze 2 tablespoons of lemon juice.
- Combine lemon zest strips, sugar, and 1.5 tablespoons of water in a medium saucepan and bring to a boil, stirring constantly until the sugar dissolves. Turn off the heat and add 0.5 teaspoon of salt. Remove the zest strips and let the syrup cool for 15 minutes.
- Pour the syrup into a pitcher and add lemon juice and 2 cups of cold water. Pour the lemonade into three ice cube trays and freeze until firm, about 8 hours or overnight. The ice cubes won't be as hard as ice.
- Combine frozen lemonade cubes with 0.5 cups of cold water in a blender and blend, stopping and stirring as needed, until smooth and pourable. Pour the lemonade mixture into four 240 ml glasses. Garnish each serving with a lemon wedge.
