Ingredients:
- 1 cup whipped topping, thawed
- 110 g goat cheese with honey
- Zest of 1 lemon
- 0.5 tsp vanilla extract
- 1 tbsp unsalted butter
- 2 cups hulled and chopped strawberries
- 2 tablespoons of honey
- 2 tbsp. granulated sugar
- A round slice of watermelon, 1 cm thick.
- 1 cup seedless white grapes
- 1 cup blackberries
Preparation:
- In a mixer or food processor, combine the whipped topping, goat cheese, lemon zest, and vanilla. Blend until smooth and light. Refrigerate. Melt the butter in a large skillet over medium heat. Add the strawberries and sauté for 10 minutes, or until they begin to soften. Add the honey and sugar. Continue cooking for another 3-4 minutes.
- Remove from heat and refrigerate until completely cool, about 30 minutes.
- Once the strawberry mixture has cooled, spread the whipped topping evenly over a watermelon slice. Arrange the grapes in a ring around the edge of the watermelon, creating a "rind." Place the strawberry mixture in the center of the ring and spread it evenly. Top with blackberries and slice like a pizza.
