Cheese log with pistachios

Ingredients:

  • 220 g of cream cheese, room temperature
  • 3/4 cup grated sharp cheddar
  • 3/4 tsp Worcestershire sauce
  • Zest of half a lemon, finely grated
  • A pinch of cayenne pepper
  • 0.5 cups roasted salted pistachios, finely chopped
  • Crackers or sliced ​​bread for serving

Preparation:

  1. In a medium bowl, combine cream cheese, cheddar, Worcestershire sauce, lemon zest, cayenne pepper, and a few grinds of black pepper until smooth.
  2. Line your work surface with a large piece of plastic wrap and spread the cheese mixture on top. Using the plastic wrap, shape it into a 15 cm long log. Refrigerate until set, about 1 hour.
  3. Place the pistachios on a large plate. Unwrap the cheese log and roll it in the pistachios, coating it completely. Serve immediately or wrap in clean plastic wrap and refrigerate for up to 24 hours.
