Kale salad with apples, ginger, and sesame seeds

Ingredients:

  • 1 sweet crisp apple, such as Honeycrisp
  • 1 small orange
  • 4 cups tightly packed small kale or spinach
  • 1/2 cup chow mein noodles or fried wonton strips
  • 1/4 cup toasted flaked almonds
  • 1/3 cup Asian sesame-ginger dressing

Preparation:

  1. Slice the apple into thin strips. Peel and separate the orange into segments, then cut each segment in half crosswise.
  2. Place the cabbage in a large bowl. Add most of the apple, orange, noodles, and almonds. Pour in the sesame-ginger dressing and toss to coat. Season with salt and pepper to taste. Top with the remaining apple, orange, noodles, and almonds.
