Ingredients:
- 3/4 cup Greek yogurt, 2% fat
- 2 tbsp. l. rice vinegar
- 2 tbsp. l. olive oil
- 0.5 cup chopped fresh chives (small bunch)
- 0.5 cup chopped fresh parsley
- 1 small clove of garlic
Preparation:
- Combine the yogurt, 2 tablespoons water, rice vinegar, olive oil, chives, parsley, garlic, and ½ teaspoon each of salt and black pepper in a blender or food processor and blend until smooth. Cover and refrigerate for 30 minutes before serving. The dressing can be stored in the refrigerator for up to 3 days..
