Grilled pizza with fresh tomatoes and basil

Ingredients:

  • 450 g of ready-made pizza dough at room temperature
  • Premium flour for working with dough
  • 1 tbsp. l. olive oil
  • 2 tbsp. grated mozzarella
  • 1/4 tbsp. grated parmesan
  • 2 medium plum tomatoes, sliced ​​and patted dry with paper towels
  • 0.5 cup fresh basil leaves, torn

Preparation:

  1. On a lightly floured work surface, stretch and roll the dough into a circle about 1/4 inch thick and 12 inches in diameter (it doesn't have to be perfectly round). Transfer to a 18-inch sheet of heavy-duty aluminum foil and brush the pizza with olive oil. Lift the foil and place the dough on the grill. Grill until golden brown on the bottom and almost cooked through, rotating the foil a few quarter turns to ensure even cooking, 4 to 7 minutes.
  2. Remove the pizza from the grill. Sprinkle with mozzarella and Parmesan, add chopped tomatoes, and season lightly with salt and pepper. Return the pizza to the grill. Cover and cook until the cheese is melted, another 2-3 minutes. Remove the pizza from the grill and sprinkle with basil.
