Italian pasta salad with herbs and salami topcook.tomathouse.com
Ingredients:
- 1/3 cup olive oil
- 2 tablespoons white wine vinegar
- 1 small shallot, chopped
- 200 g of dry radiator paste
- 100 g salami slices, cut into strips
- 1 cup fresh mozzarella, diced
- 1 cup halved grape tomatoes
- 0.5 cup torn fresh basil leaves
- 0.5 cups giardiniera, chopped (drained)
- 1 tbsp chopped fresh oregano
Preparation:
- Bring a large pot of water to a boil and add salt.
- In a large bowl, combine olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of freshly ground black pepper.
- Add the pasta to boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool; add to the bowl with the dressing.
- Add salami, mozzarella, tomatoes, basil, giardiniera, and oregano to a bowl and toss. Season with salt and pepper to taste. The pasta salad is best served immediately.
