Ingredients:
- 5 cups of oatmeal
- 1 cup olive oil
- 1 tbsp. natural maple syrup
- 1 teaspoon coarse salt
- 1 cup raw almonds
- 1 cup raw walnut halves
- 1 cup bittersweet chocolate pieces, such as Scharffen Berger 70%
Preparation:
- Preheat oven to 175°C. Line a baking sheet with parchment paper and set aside.
- In a large bowl, combine the oats, olive oil, syrup, and salt. Stir well to coat evenly. Spread the mixture on the prepared baking sheet and bake for 30 minutes, stirring once.
- Remove the baking sheet and stir in the almonds and walnuts. Bake, stirring occasionally, until the granola is evenly browned, another 25-30 minutes. Let cool completely, then stir in the chocolate chips. Store granola in a tightly sealed container for up to 2 weeks..
